This baked potato recipe looks so good I just had to share. My food allergies and food sensitivities won’t allow me to eat white potatoes or olive oil right now, but with a few modifications, I can’t wait to try this baked potato recipe!
I’m going to try it with sweet potatoes, and then am wondering what other veggies might make the cut… Thinking rutabaga’s might work well too!

I love using sweet potatoes with oregano, fresh rosemary, or Celtic sea salt and black pepper. So yummy and so much healthier than traditional fries!
